Fiddlehead Greens Hors D'oeuvre

Ingredients

2 quarts NorCliff Fiddlehead Greens
1 Juice of a lemon
3 cups Water
1/2 cup Salad Oil
1 tsp. Salt
1 stalk Chopped Fennel (optional)
2 stalks Celery & Coriander seeds
4 to 5 Peppercorns

Instructions:

  1. Bring all ingredients except NorCliff Fiddlehead Greens to a boil.
  2. Add NorCliff Fiddlehead Greens and simmer slowly for 10 to 15 minutes until tender.
  3. Drain and cool.
  4. Serve chilled or at room temperature.

Fiddlehead Greens Shiitake Salad (Makes 2 appetizer portions)

Ingredients

3/4 cup NorCliff Fiddlehead Greens
1/4 lb. Small shiitake mushrooms
2 tsp. Peanut oil
2 tsp. Japanese soy sauce
1 tsp. Grated fresh ginger
1 tsp. Dark sesame oil
1 tsp. Lemon juice
1/2 tsp. Sesame seeds

Instructions:

  1. Cook NorCliff Fiddlehead Greens for 5 minutes in lightly salted, rapidly boiling water.
  2. Drain and cool under cold running water.
  3. Cut stems from shiitake mushrooms and brush caps with peanut oil.
  4. Broil 2 to 3 inches from the broiler for 2 to 3 minutes per side.
  5. Set aside and let cool.
  6. Stir together with the soy sauce, ginger, sesame oil and lemon juice in a medium sized bowl.
  7. Add mushrooms and NorCliff Fiddlehead Greens and toss.
  8. Divide into 2 equal servings and serve at room temperature.
  9. Enjoy!

Gourmet Marinated Fiddlehead Greens

NorCliff Fiddlehead Greens, like artichoke hearts, respond well to marinade-a fact, which was discovered one morning when tasting a bit of tired salad left over from the previous evening!

Ingredients

250ml/1 cup Olive Oil
50ml/1/4 cup Wine vinegar
125ml/1/2 cup Water
25ml/2 tbsp. Lemon Juice
1ml/1/4 tsp. Salt
1 Parsley and thyme to taste
5 Peppercorns
1 String of rosemary tied in a bag

Instructions:

  1. Bring all of these ingredients to an aromatic boil, then turn down the heat and simmer the mixture for 5 minutes.
  2. Turn up the heat again and add:
    1 Crushed clove of garlic
    2 Shallots or sliced green onion tops
    250ml/1 cup NorCliff Fiddlehead Greens

Boil for 1 minute.

  1. Remove from heat and allow mixture to cool completely for and hour or two.
  2. Refrigerate in a covered container for up to 2 weeks.

Marinated Fiddlehead Greens

Ingredients

500g/1lb Fresh NorCliff Fiddlehead Greens
50ml/1/4 cup Minced Green Pepper
50ml/1/4 cup Minced Onion
50ml/1/4 cup Salad Oil
50ml/1/4 cup Cider Vinegar
90ml/5 tbsp. Sugar
2ml/1/2 tsp. Salt
1ml/1/4 tsp. Pepper

Instructions:

  1. Cook NorCliff Fiddlehead Greens until slightly tender.
  2. Gently toss NorCliff Fiddlehead Greens, onion and pepper.
  3. Combine the remaining ingredients for marinade in a large bowl.
  4. Add NorCliff Fiddlehead Greens, onion and pepper.
  5. Marinate for 24 hours.
